…made some soup!!!

Vegetable soup


Cooked some carrots, leeks, courgette and onion with olive oil. Added water, pepper and salt. And mashed everything to a nice creamy and healthy soup!

I realise I might soup for a while but that’s quite OK ☺️

Always good to have something in the freezer πŸ˜‰

…3 ingredients only and I truly hope they make you happy πŸ˜ƒ

1. 170g of avocado (in a measuring bowl)

2. Top it up with milk to the 475ml line

3. Add 1 teaspoon of honey

And then just blend until is nice and smooth

Ju’s avocado milkshake

 
This is it!! This simple milk shake has been part of my life since 2005! I first did it for Oreste to try and match a smoothie he had in Dubai. Apparently I was successful 😁

The recipe above makes a BIG BIG and filling milkshake. I tend to have it after a gym session and/or for brunch with some toasted bread. This keeps me going for hours… 

If you have a very tiny stomach I recommend  you to have half of the aboveπŸ˜πŸ˜‰

Last Sunday I found myself thinking how much I love eggs! Lately I always tend to have them boiled!!!

Why?? …

… I thought?!?

Well… a good egg pan was missing!!! Off course I went and got it…that same day I cooked the most perfect omelette!

Moving on…

FACT 1: Yes, I love to try different recipes but ever so often I find myself going through the same recipe repertoire over and over again. This is particularly more noticeable during the week when I try to fit in everything: work, working out, house chores, etc, etc….and I don’t even have children yet!!!

FACT 2: Yes, I am quite energetic and tend to do a variety of activities every day but I am no Wonder Woman! Truth is, I tend to stick with healthy, faster, easy to make recipes.

FACT 3: Β Yes, I have seen a salad recipe with only a few ingredients and thought:

My #TransformationTuesday Chickpea and Prawn salad was absolutely divine! With only a few ingredients – prawns, lettuce, chickpeas, pine nuts, garlic and olive oil – I managed to innovate my easy to make healthy recipe portfolio…on a week day.

Then comes #ThowbackThursday! Nothing like a good, old spaghetti dish as a reward for a busy and productive week and GREAT workout at my gym!

Instead of crying my eyes out because my ‘volpino’ is back in the UK, I decided to have some “me” time in the kitchen and try something new! This is how it was

and fortunately my thoughts were proven right!!

It’s been 1 year and almost 3 months since my last post! I’ve been wanting to write for a while but just didn’t know where to start. On May 13th 2013 I was celebrating a new job! Well… since then I changed job yet again, got engaged and married in less than a month, relocated to Doha, Qatar, moved twice while in Doha…

Needless to say throughout all these life events food and cooking has always beenΒ present!

And then yesterday happened and I knew exactly how toΒ break my loooooooong silence!

I cooked a 3 pan meal ONLY for me!

3 pan meal only for one...guess I really am a blue collar foodie...or else just really enjoy eating my own food (how modest!)

I relocated to Doha by myself. My MOST WONDERFUL husband, Oreste Majeli, is still living in our place in London. He does come to Doha every month which makes of me a very fortunate person!

When I relocated, back in November 2013 I started cooking almost straight away…it’s part of me and was important to make me feel more settled! Two things were VERY important: cooking and finding a good gym! And I got both!

I started shy I must admit…cooking only for one…hummm…not the most exciting thing! But baby step by baby step I found not only I wanted to cook simple meals but also more complex ones even if it was ONLY for me. And yesterday I found myself cooking a risotto involving a three pan preparation – I was extremely pleased and proud of myself!
